Here at the Mainstay, a Southampton Classic Bed and Breakfast well over 100 years old, I had the pleasure to stage this home and add a few pillows from my collection.

This jewel of a B&B in Southampton has a long history and its’ owner Elizabeth Main has stylishly maintained this for the last 24 years.  A great place to spend a holiday.

“Elizabeth Main has owned this charming Southampton home for over twenty years. The house which goes back almost 200 years has been lovingly restored to capture the easy country elegance of the old days of Southampton.  Mainstay is the longest run private Bed and Breakfast in Southampton.  The home is on an acre of property on historic Hill Street and within walking and biking of the glorious world famous  Coopers Beach and elegant shopping on Main Street and Jobs Lane. Shinnecock, Sebonac and National Golf Courses are approximately one mile from the property which has a 20×40 in-ground SALTWATER pool and 1/2 acre perennial gardens.   Mainstay has been featured in Good Housekeeping’s June 2001 subscription issue and ON THE JITNEY magazine issue , today the country home is used as a summer house for extended families during the season as well as still inviting guest on occasion for off season with limited availability. ”

Great Way to Spend A Snowy Evening in The Hamptons

Tonight we are the lucky guests of Elizabeth Main, owner of The Mainstay in Southampton Village.  She is cooking her amazing and decadent ‘ribs’ in one of the most inviting kitchens I have ever been in.

While unfortunate to others, her kitchen is only open to her Inn’s guests for breakfast; the Mainstay offers a wonderful breakfast in her country dining room.  Discover the old world antique shingled Hamptons home on Hill Street.  It is fabulous all year round.

Apple Cider Ribs

Yields: 4 servings
Cook time: 3 3/4 hours Prep time: 20 minutes

Ingredients

  • 1 cup KC Masterpiece Original Barbecue Sauce
  • 2 slabs loin back ribs (baby back)

Liquid Seasoning

  • 1 tablespoon dry rub mix
  • ¼ cup apple jelly
  • ¼ cup brown sugar
  • ¼ cup honey
  • ½ cup apple cider

Dry Rub

  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • 4 teaspoons chili powder
  • 4 teaspoons garlic salt
  • ¼ cup dark brown sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon red pepper
  • ¼ teaspoon white pepper
  • ½ teaspoon celery salt

Instructions

  1. Remove the membrane from the back of the rib slabs. In a small bowl, combine the dry rub ingredients and mix well. Reserve a tablespoon of the rub for the liquid seasoning mixture. Generously apply the dry rub onto the front and back sides of ribs. Gently pat to ensure that the rub will adhere.
  2. Build a charcoal fire for indirect cooking by situating the coals on only one side of the grill, leaving the other side void. Add a small aluminum pan to the void side of the grill and fill it halfway with water. When the charcoal grill reaches 250˚F, place ribs meat-side up on grill grate and cook over indirect heat for two hours and 15 minutes.
  3. Remove the ribs from the grill. Place each slab meat-side down on its own doubled aluminum foil square. The foil should be large enough to completely wrap each slab. Mix the liquid seasoning in a small bowl. Pour ½-cup of the liquid over each slab. Then, tightly wrap and seal each slab with aluminum foil. Place the wrapped ribs back in cooker for one hour at 250˚F.
  4. Remove the ribs from the charcoal grill, unwrap and discard foil. Brush finishing glaze on both sides of the ribs. Place the ribs back on the grill for 15 minutes, or until sauce caramelizes.

A community oriented dance form that gives good aerobic fun for people of all ages! With live music and a caller, dance lessons are given at 7:45pm and then at 8pm we strike up the band!
